Thursday: walks, “buttercream” frosting

I make a box chocolate cake this evening, and make a (fake) buttercream frosting using Miyoko’s vegan butter, confectioners sugar, chocolate discs, water and vanilla. It turned out super tasty. I did not let the cake sit long enough, so it was a little fragile. Disappeared pretty fast, tho (it is not _all_ gone). It felt celebratory.

For lunch I used 2/3rds of a naan from Atoria’s (from Imperfect Foods), and piled a bunch of veg on it. I skipped the salami and cheese, in favor of having scoops of hummus on part of it (did not heat up the hummus with the rest of the flatbread). Very tasty, and pretty satisfying.

I had a visit with M., and then a walk, even tho it snowed.

I did the long walk by myself.

It is so much more enjoyable to read the news now: competent people doing lots of competent things. I am particularly happy with the direction it looks like the new administration is going to go on housing / homelessness. About freakin’ time.

T. had his piano lesson in the evening via Zoom — the timing had not worked out for him yesterday, so it was nice it worked out today.

I was late to M.’s mom’s zoom, but at least I remembered this time. It was nice to see everyone.
