I went back to the store in an effort to buy evaporated milk for A.’s egg tarts, and also to Kitchen Outfitters for mini tart pans. The kitchen store was surprisingly busy. I saw multiple people headed in, and it was kinda crowded inside. It might have been people shopping for gifts, but it looked like a lot of people who had plans to engage in some serious baking. Fun!

I screwed up on the milk, and the dairy I bought was sweetened condensed. Ooops. But the coconut evaporated milk was right, so R. and A. used that. I told him to butter the tart pans, but the recipe didn’t say so he didn’t and regretted it. *sigh* He also used silicone muffin tins because I only bought 4 tart tins. The filling was divine; the pastry less so. I would have used my own pastry for that recipe and I also would have blind baked the pastry before filling, but this was their project, not mine. Later on during family zoom, he explained what boston cream pie is, and I’m now thinking I might make that at some point. It sounds really good.

I got through the rest of the perpetual holiday card list, so I need to get all this stuff to the post office and buy 100 stamps and pay for postage on a bunch of stuff. Maybe tomorrow I’ll do the international ones and buy stamps, then go back and do the domestic photo mailers and drop off the 100 cards-only. I need to do at least one more card, too, because the electrician’s company sent a card so I will reciprocate.

I made turkey under biscuit. Turkey was still good. I made the filling, but not the biscuit, and put the filing in the fridge, and then made a single serve under-biscuit using the sourdough crock. It was delicious. I had put collard greens in the filling so R. wasn’t going to eat any of it anyway.
