Monday: more sourdough experiments
Oct. 17th, 2022 10:04 pmI took the sourdough out of the fridge and rolled it out (with the King Arthur Special Patent). It’s very, very soft and pillowy. I was going to make cinnamon rolls but with chopped apple in them also, but it was so soft that they kinda collapsed. My sister says the result sounds like strudel, and she’s not wrong. They were really good, and are already more than half gone.
Next up: I finally opened up the can of rye. I ran some through the mill, bolted it, and then added a little sourdough starter and a lot of water. It absorbed a crazy amount of water. We’ll see what it does overnight, and then make a roll or something with it. I want to make a rye bread with candied orange peel and cardamon (the bag of green cardamom pods arrived today). I really liked the julekake I used to get at Ballard QFC, but when I realized the older version of that involve rye, I was like, tell me more.
