Monday: carrot cake
Mar. 14th, 2022 08:49 pmI’ve had a lot of carrots and other root vegetables from the farm share, and trying to figure out how to use them. Not that they go bad quickly! But still. Lots of vegetable hash. Today, I finally decided that I might as well make some carrot cake. Since I haven’t done that in a long while, I wasn’t sure what recipe I used to use. I picked the Jane Lukin one, since I like her chocolate cake the best. I cut it in half and made it in a loaf pan; it is all gone now. I guess I’ll be making another one tomorrow! I do have plenty of eggs. No frosting ; who needs it, really, anyway.
Walden arrived ; there was ground pork, so I’m going to use some of those root veg in a meat loaf.
I finished the Chicken Pozole in a Leading Role from Drew’s Stews. It was very tasty. I have one serving of Other Voices, Other Shrooms, a mushroom and barley stew, left. The bread’s gone, and most of the dip that was included gratis is also gone (the beet and walnut thing is long gone ; I gave it to the neighbors and they ate it within hours).
I walked with M. and I also did the short walk by myself and chatted with my sister.
We’ve managed to get the form submitted to CMSC for T.’s assessment for readiness to learn to drive.
It was a nice, quiet, relaxing day.
