I pulled the banana muffin recipe out and did my usual modification. That is, rather than cream butter and sugar, I emulsify oil and eggs and more or less proceed from there (with the mix wet, add dry philosophy being the dominant theme). Other than that (ha! For me, this is a minor change), I actually followed the recipe (okay, we jacked the cinnamon and vanilla and eliminated the nutmeg, but that doesn't count). And wow! These muffins have way better structure than any of my whole grain muffins. Taste good, too. I'll need to update the online cookbook to reflect this change. Dunno which part mattered (possibly the honey).

I just got that a couple of days ago. Yesterday, we made the banana oat pancakes, which were very good with a little extra milk added (G. doesn't like thick pancakes). Today I'm going to try chocolate chip cookies, but obviously I need to check out the muffin recipes too. :)
