Tuesday: walks, phone call

I walked with M.
I did the long walk by myself and had an enjoyable phone call with my sister.
My first order from Misfits arrived, so I had avocados! I haven’t had avocados to get into trouble with for a bit. I also had some tamales. Yum. I took a daikon from an earlier Siena farms delivery (not even them most recent one) and used a peeler to make “noodles”. I’ve never done any kind of keto nonsense so I have never done this kind of thing, however, I felt like it was worth a try for a particular recipe involving an avocado sauce on daikon noodles. I mean, that’s a positive combination. I even soaked the daikon strips (“noodles”) in salt water.
It was pretty good.
However! What was even _better_ was taking some of the corn tortillas (they arrive occasionally in Siena Farms boxes and they are frozen and I never eat them so we had 4 or more packages recently), putting them in the countertop oven, and putting fake mozz (from misfits), jalapeno (ditto), tomato from Roche Bros, the leftover guac from the noodles experiment. Kinda nacho adjacent. Yummy! Those were the last three of the corn tortillas from the most recent package, so I got another one out of the freezer to thaw. I’ve got another avocado, one and a half jalapenos and 3 more limes, so good times await!
It was pretty warm today, but not unpleasantly so.
I cooked the mushrooms from the most recent Siena Farms order, including making some duxelles; I needed the space in the fridge.
