I had a long phone convo with K. Delightful! As a result of the conversation, I bought _Fashion Victims_. It looks amazing.
R. and I walked over to pick up A. at school. That was pleasant, altho she had a weird meltdown at school which is making me wonder more if I need to get her another appointment with a neurologist.
Yesterday, I decided to experiment with the 3 ingredient cookie again. This is the 1 cup of peanut butter (I just use peanuts in the food processor), 1 cup (brown) sugar, 1 egg recipe. I have walnuts, so I used those instead. But the result looked too wet, so I folded in a couple tablespoons of cocoa powder. The result spread out but not too much, had a delightful cracked surface, were fluffy and tasted amazing. I ate half the batch, and T. and R. finished it off.
Today, I tried again. This time, I finished off the bag of walnuts (1 1/2 cup), 1 cup brown sugar, 1 egg, 2 tablespoons of cocoa powder and a splash of vanilla. It formed a nice ball in the food processor and was glossily chocolatey. It did not spread out as much and the cookies did not stick _at all_. They were incredible.
If you want to duplicate this, I’ll mention that I processor the nuts to nut-butter consistency or close, then the rest of the ingredients. Usually baking rules — 350 or whatever, and 12 minutes or so. It seems to be on the long end for cookies and is quite forgiving. I’ve been putting them on parchment paper to bake.
