Wednesday: walks, convos, cooking

I made stew. We had lamb stew meat and a skirt steak thawed out. I chopped fennel, carrots, turnips and some small sweet peppers. I used up the pork gelatin from pulled pork a few days ago. I finished off with some beef bone stock from Lilac Hedge. It turned out really nice. I made a roux (bacon fat and white flour) in the InstaPot (saute mode), and then did the veg, then the meat, then the pork gelatin and finally the beef and lamb.
I had a 2 hour plus convo with J. Very nice!
I had a 1 hour convo with R., while doing the 3 mile loop. Very nice!
We had the stew for dinner with another split (a North Macedonian Pinot Noir split from the Costco Adventure box). I boiled it on the stove (I wanted the meat a little softer) and added gnocchi (we get it through Walden; I forget the maker at the moment). It was fantastic.
I remembered that pineapple pumpkin bread was a Thing (I have no idea how I knew this) and found a version of the Paula Deen recipe on food.com. I had baked a couple small squashes that looked very pumpkin like, and R. had cut up the pineapple he bought at Costco on the same trip he got the box of splits on. So I didn’t have the cans the recipe calls for, but that’s fine. I used the food processor. It’s baking now. We’ll see how it goes. I subbed cardamom for the nutmeg, because I hate nutmeg and love cardamom.

Also, I had the marmalade today that I’d started Monday and finished making on Tuesday. I boiled the water and rinds, then turned off the heat and added the sugar. I did that on the morning Monday, and then on Tuesday, we dumped it in the instant pot and pressure cooked it, but it didn’t set up enough, so we just put it on saute and let it run for a while. I would skip the pressure cook and just saute it next time. It turned out much closer to the marmalade I buy than any previous strategy.
