Monday: Happy 4th, Farm Share, cooking

The farm share arrived. I got some of it put away, then walked with M. And then, the cooking began.
Not in order.
I roasted two small eggplants in the microwave. I took one out after about 3 minutes; the other after 5. I pricked them before this. They came out of the skins nicely. I food processored them, and then I added some navy beans I cooked a day or so ago, also some cumin, black pepper, some EVOO. Looks great, smells great, tastes great. Alas, the crackers in the house are things like saltines, ritz, club, graham. To correct that, I have taken some of the excess sourdough from the crock, added EVOO and some herbs, and plopped it down onto a parchment sheet. I am not prepared to be so finicky as to add more flour, or put it in the fridge and then roll it out. So we got another sheet of parchment and pressed it out, but then it stuck to the second piece of parchment. Whatever. Now I have two sheets of cracker dough spread out. Into the toaster oven with the first; we shall see how this turns out. ETA: I don’t think I was cooking it hot enough and I don’t think that the dough was thin enough, so it is closer to a crunchy thin flatbread than it is to a cracker. However, it is a perfectly acceptable vehicle for the eggplant and navy bean dip, so.
I cooked the choy sun from 2 weeks ago.
I cut up the garlic scapes from 2 weeks ago. I peeled and sliced the 4 cucumbers that arrived today (alas, the cucumber from 2 weeks ago was gross. Into the compost with it). I collected brine, added more vinegar, sugar, salt, etc. I found some jars and put the slices and some of the scapes in the jars, poured in the heated brine. That all went into the fridge once cooled (I know this is not real canning. This is a ton of fridge pickles that will get used or tossed in the near future). R. hates cucumbers, so it doesn’t matter that there is garlic in there. The rest of 2 weeks ago scapes went into the freezer in a couple leftover sunbasket small containers.
I cooked a lot of mushrooms. I opened a bottle of La Crema rather than using vermouth, because vermouth is getting a little scarce around here.
I cut up the summer squash from 2 weeks ago and air fryered with some spray avocado oil.
I took the food processored veg leftover from the previous meat loaf, which I had not yet used up and which still seemed completely fine. I had thawed some ground lamb and ground beef. I _thought_ we were out of ground pork, altho R. did eventually find some the meat loaf was already in the toaster oven by that point. We used up the flake barley that arrived long ago unsolicited with the bulk popcorn order (we think — could be wrong about that) and added an egg. R. did the spices, mixing, and got it in the toaster oven; I monitored and removed when it was done.
I found some sesame seeds in the freezer. I food processored them in an effort to make tahini, but they didn’t taste good any more, so that went into the trash. Oh well! They had been there for years. Possibly a decade. ETA: Amazon order sez February 2012.
I ate leftovers for lunch from yesterday’s dinner at Tavern on the Square in Littleton with friends. Yummy. General Tso’s chicken with tempura broccoli. I have broccoli and cauliflower. I have some plans for that air fryer.

In addition to all the above cooking:
I made my english muffin for breakfast. I made A.’s lunch (grilled cheese, half an apple), and dinner (cheeseburger — bun was from the store, tho). I cooked a package of bacon. I boiled pasta for T.’s dinner and heated up red sauce (I’d made it some days ago). I made myself a rice and vegetable bowl.
And there are blondies in the oven.
