Tuesday: spinach salad with tempeh, date night

I made the spinach salad with tempeh. It was interesting. I have no idea how well it will survive until tomorrow’s lunch when I will eat the other half of it. I do not know if I have ever made a meal involving tempeh before. I know I have had it at other people’s houses and at restaurant.

We went to Karma in Concord for dinner, because R. and I continue to have sore throats and he wanted soup. I got the tangerine beef and probably screwed up in eating the whole thing, but this box of meal kits was literally all salads and I have been short on calories as a result.

I had a really nice convo with J., probably the last long one for a while since the kids will be out of school.

I did not have a convo with K., altho at least we remembered this week. She was going to a friend’s graduation from nursing school. Congratulations to all the many graduates from many schools out there this summer!
