Happy T-weekend!
Nov. 22nd, 2018 08:12 pmI hope that the holiday weekend treats you well.
However, if the holiday weekend does NOT treat you well, I hope that you enjoy it ending. Because it will.
Because I was inundated with emails from Whole Foods post-Amazon purchase, I had the presence of mind to pre-order a turkey, which I don’t consistently do because I get out of the habit of cooking for T-weekend because Extended Family. A 9 pound bird is so light! It’s really just a large chicken.
I made black rice stuffing. I used some ginger (micro plane grated), mushrooms (sliced, sautéed), mild peppers (ditto), sage (fresh, chopped fine). It turned out really nice! I thought the strong flavor of the black rice would go well with turkey, and it did. I’m not sure how it would work with chicken, but I hope to find out some day. I meant to make a peanut sauce to go with, but I’ll have to do that with the leftovers.
We had green beans (microwave in the bag — so simple it is actually embarrassing), spinach salad (which almost no one ate, but it was good, and the kids liked the bacon), kale (olive oil and balsamic vinegar), sweet potatoes (baked, skinned, chopped, cumin, paprika, cinnamon sugar, served with my apple crisp topping, but instead of flour I used blendered oatmeal, because MIL doesn’t do wheat). We had a cake from Concord Teacakes. It was beautiful and by all accounts super tasty and there is still over half of it left so everyone is very happy. I made apple crisp (Granny Smiths, same topping as the sweet potatoes). Dinner rolls from the store (no dairy!).
We had grilled chicken, raw carrots, raw Granny Smith slices, carrot and raisin salad, raisins, grapes for the kids. T. requested a plate of rotini pasta with Parmesan (the crappy stuff in the green container) and butter. Beer, white wine, I made a couple cocktails, water, lime perrier, chocolate milk boxes and apple juice boxes.
A bunch of us watched Coco after dinner.
All in all, very enjoyable, and very flexible in terms of options for kids and various dietary constraints. You’ll note the total absence of allium, and the near total absence of dairy.
A fridge full of leftovers I’m looking forward to eating is something to be thankful for.
